Don’t Worry, Be Happy

Hi SMART girls! The end of winter always seems to be a rather dull time of year. The holidays are over, it’s chilly outside and your schoolwork is probably piling up. Sometimes, it’s easy to be negative and frustrated. Although, I always like to look for the positive aspects of any situation. The days are getting longer, spring is on its way and we all are healthy and able to smile :)

If you are feeling a little down, check out these tips for a happy day!

1. Eat a delicious breakfast! I love chocolate chip waffles! In my mind, a great day starts with a little dessert…

Here is my favorite VEGAN version via The Vegan Chickpea

Chocolate Chip Belgian Waffles with Bananas, Ice Cream, and Strawberry Toppings
makes two waffle sundaes
For the waffles:
1/4 c sorghum flour
1/4 c millet flour
1/4 c potato starch
1 tsp brown sugar
1/2 tsp baking powder
1/4 tsp xanthan gum
3/4 c unsweetened vanilla almond milk, plus more if desired(see note)
1 tsp apple cider vinegar
2 tsp chocolate chips
1 banana, sliced
vanilla ice cream
strawberry topping
To make the waffles: Preheat waffle maker to desired setting.  In a medium bowl, mix together all dry ingredients.  Add in almond milk, apple cider vinegar, and whisk until completely combined.  Fold in chocolate chips.  Grease preheated waffle maker with Earth Balance and pour in allotted batter.  Cook until machine signals that the waffle is done, or until lightly golden brown.  Remove waffle and repeat with remaining batter.

Non- vegan version, but just as delicious via How Sweet It Is

Whole Wheat Double Chocolate Chip Waffles

2 cups whole wheat pastry flour

2 teaspoons baking powder

1/4 teaspoon salt

2 tablespoons sugar

1/4 cup cocoa powder

1 cup skim milk

1 egg

2 tablespoons canola oil

1/2 cup chocolate chips

Preheat waffle maker.Combine all dry ingredients together, then add egg, milk and oil. If batter is too dry, add milk 1 tablespoon at a time, until it is wet but thick. Fold in chocolate chips. Spoon 1/3 cup batter into waffle maker, cooking for 2-3 minutes or until waffle is set.
